How many grams of Dehydrated sourdough are needed for 500g of flour?

In order to obtain the right consistency and unique flavour, we suggest to use a percentage of 5% of Dried sourdough on the total weight of flour (e.g. 25g of Dried sourdough, equal to the content of 2 sachets, for 500g of flour). This way you will be able to obtain the perfect rising to delight even the most demanding palates.
